No those aren’t truffles…. those aren’t any sweets actually… but meatballs
Rolled in a bread crumbs and waiting for their turn to jump into the pan and fry joyfully to their fate.
So yes today’s lunch was an Italian classice – home made meatballs with fresh tomato sauce. Is simple and fun and really easy to feed a big crowd.

I love Italian food for it’s simlicity and comfort it brings. Most of Italians I know cook from fresh ingredients. The food is aromatic and always made with love. There’s passion in the every single dish. Maybe I’ve exaggerating but that’s how I feel about Italian food.
There’s a goodness in fresh tomato sauce. In summer usually stick to this kind. It’s quick and rewarding and more over is fresh, no chemistry at all. Is good on it’s own, with meat, meatballs or simply with nice chunks of streaky bacon and sausage.
Homemade Meatballs with Fresh Tomato Sauce
for meatballs:
620g beef
1 bun
1 small apple
1 medium size onion
handful of dried wild mushrooms
250ml broth
seasoning of your choice
1 egg
Dice beef, peel and cut onion, peel and cut apple. In a bowl mix broth with mushroom and soak in the bun. Using an electric mincer mince together meat, onion, apple, mushrooms and pressed bun. Mix all in a bowl with egg and seasoning. Cover in cling film and leave for an hour. When ready form the balls, roll in breadcrumbs and set aside. Fry in frying pan and set aside.
for the sauce
1kg of meaty tomatos
2 young onions with spring onion
250g mushrooms
75g tomato puree
seasoning of your choice: salt, pepper, spices, herbs
Peel the skin of tomatos. Cut the in eights. Slice onion and mushrooms. In a pan fry onions and mushrooms. Add chopped tomatos and tomato puree. Give a good stir, cover the pan and let simmer for 20-25mins or untill tomatos fall apart. Season up according to your prefrences. Keep simmering. Add meatballs and let simmer for another 15-20 mins or until pasta i ready. Serve and enjoy

Yay for meatballs! I try to make a giant batch of meatballs and freeze ‘em so we have them on hand for quick meals. But really, the ones you’ve made with the fresh tomato sauce look WAY better
we do freeze meatballs as well. usually already with sauce, then it’s just a quick fix for dinner when’s no time to cook. Thank you for stopping by
